Kenya AA is graded by bean size, not simply cupped for quality, which is what makes it a uniquely tradeable specialty coffee: two lots labeled AA are size-comparable in a way most other origins cannot claim. Beans are retained on a 17/18 screen — roughly 7.2mm and up — and come from smallholder-dominated wet mills that fully wash and sun-dry the cherry before delivery.
